Kimchi and Caramelised Onion Grilled Cheese

Now that you have a recipe for kimchi here is an oh so delicious grilled cheese that you can make with it!
Like a French onion soup but with a proper kick and in sandwich form, you have got to make this life changing rendition of a classic grilled cheese.

Ingredients:
2 pieces of your favourite bread (sourdough recommended)
1 Onion diced
1 tbsp Mirin
1/2 Tbsp Soy Sauce
Parmesean (grated)
Sharp Chedder (cubed)
Butter/ Olive oil
Instructions:
Start by caramelising your onion, in a pan heat butter or olive oil, in it, sauté the onion until translucent and add Mirin and soy sauce letting the onion caramelise and lightly brown on medium to low heat (about 10 min).
Shred/ cube the cheese and mix together
Butter/ olive oil the outside part of your bread, on one side place the kimchi (as much as desired), on the other side spread your caramelised onion, place cheese on top of the onion for faster melting and place in a well oiled or buttered pan for grilling.
Carefully assemble the bread sides together and enjoy!
